About cold smoked fish

Cold smoked fish is cooked at temperature up to 40 °C. First, the fish is salted, then soaked and finally smoked. The process of smoking itself lasts 8-12 hours.

Such fish has golden color and a dense texture. Unlike hot smoked fish, the taste and smell of cold smoked product are more expressive. Due to preservative properties of smoke the product prepared in this way has extended shelf life.

Cold smoked fish can be packed either in usual transparent bags or vacuum.
